Jam jar vinaigrette and triple-berry salad

Here’s a great recipe to try when you reach the bottom of your jar of berry spread or jam. You’ll end up with a great vinaigrette with a touch of fruity sweetness.  We made our vinaigrette in a nearly-empty wild salal berry spread jar, and our vinaigrette turned out delicious.

Add to a mostly empty jar:
A pinch of salt
Pepper, to taste
1 teaspoon of dijon mustard
1 tablespoon of vinegar (red wine vinegar, white wine vinegar, and apple cider vinegar all work well)
1/4 cup of oil (olive and walnut both taste great)

Now put the lid back on the jam jar and give it a good shake.  This recipe makes several servings.

Add your favorite salad ingredients and enjoy!  We love this dressing on mixed salad greens with feta, toasted pumpkin seeds, dried cranberries, and fresh blueberries.
